「Tuna cheek confit and potato puree」

It's delicious when you confit tuna cheek meat with olive oil, garlic, and herbs. This is a recent discovery that I absolutely love. The potatoes are aged potatoes, which are also used in gnocchi, so they're delicious on their own with mashed potatoes. It tastes even better when eaten with the delicious tuna oil.
