淡麗やや辛口

酒造好適米の中でも
最高級の東条山田錦を40%まで精米し、
酵母が生育できるぎりぎりの低温でじっくり発酵させ、
厳冬期に仕込んだ特別なお酒です。

水野杜氏の高度な技術と経験を最大限に活用し生まれた大吟醸。
低温長期発酵でお米の豊かな旨味を引き出し、
山田錦の米アルコールを加えることで透明感があり、
キレのある味わいに仕上がりました。

New brands have arrived!

Daiginjo Toji no Yorokobi
Light and slightly dry

Among the rice suitable for sake brewing,
the highest quality Tojo Yamada Nishiki is polished to 40%,
and slowly fermented at the lowest possible temperature for yeast growth,
a special sake brewed during the harsh winter.

This Daiginjo was born by making the most of Toji Mizuno's advanced techniques and experience.
Long-term fermentation at low temperatures brings out the rich flavor of the rice,
and the addition of Yamada Nishiki rice alcohol gives it a clear,
crisp taste.
