Purchased from Toyosu’s No.1 tuna wholesaler, “Yamayuki,”
this top-ranked tuna was landed in Nakanosaku
and caught by Itsuki Miyagawa.
Sea conditions, precision in ikejime, proper bleeding, and strict temperature control—
in this world, a fisherman’s technique determines the true quality of the fish.
Because the foundation is flawless,
we are able to take it even further.
We carefully regulate moisture,
preserve and concentrate the umami,
and nurture it patiently through precise control of temperature and time.
